Hot Line Operations
  • Assist in the preparation and cooking of hot dishes, including meats, poultry, seafood, vegetables, and sauces.
  • Follow standardized recipes and instructions from senior chefs to ensure consistency and quality.
  • Support the execution of grill, sauté, and oven-prepared items during service.
  • Ensure proper plate presentation and temperature before food leaves the hot pass.
Mise En Place & Prep
  • Prepare ingredients and components for daily service (e.g., chopping, marinating, portioning).
  • Label, store, and rotate mise en place according to food safety standards.
  • Maintain a clean, organized workstation at all times.
Team Support & Communication
  • Work closely with the Chef de Partie and other sections to ensure smooth and timely service.
  • Communicate any shortages, quality issues, or delays clearly and promptly.
  • Assist other sections (e.g., Cold, Grill) when necessary.
Hygiene, Safety & Equipment Care
  • Maintain strict hygiene, sanitation, and food safety standards at all times.
  • Clean and sanitize all equipment and work areas before and after use.
  • Use kitchen tools and equipment correctly, reporting any faults immediately.
Inventory & Portion Control
  • Use ingredients efficiently to minimize waste.
  • Assist with stock rotation (FIFO), labeling, and daily checks of the hot section.
  • Ensure correct portion sizes are maintained according to recipe and cost control standards

The Groves is a dynamic, upscale restaurant venue, featuring multiple restaurants including South African, South Asian and various international inspired flavours, focused on delivering exceptional experiences.

Requirements

  • Experience:
    Minimum 1–2 years in a professional kitchen, preferably in a hot kitchen or line cook role.
  • Experience in Japanese and Chinese cuisine preferred
  • Skills & Knowledge:
    • Basic knowledge of hot kitchen techniques (grilling, sautéing, roasting, etc.)
    • Understanding of kitchen hygiene and food safety protocols
    • Knife skills and familiarity with mise en place practices
    • Ability to take direction and learn quickly in a fast-paced environment
    • Attention to detail and commitment to quality and consistency
  • Personal Traits:
    • Energetic, positive, and eager to grow
    • Professional appearance and behavior
    • Punctual and dependable
    • Team player with good communication skills
